Sweet & Sour Meatballs

Ingredients

  • 2 packs 250 g each PUREFOODS HEAT & EAT CHICKEN MEATBALLS
  • 2 cups cooking oil

Sauce:

  • 1 pc 50 g red onion, quartered
  • 1 can 227 g pineapple chunks, drained
  • 1/2 cup cane vinegar
  • 1 cup sugar
  • 2 tbsp soy sauce
  • 1/4 cup banana ketchup
  • 2 tbsp cornstarch dissolved in 1 cup water
  • 1/2 tsp iodized fine salt
  • 1/4 tsp pepper

Instructions

  • Fry meatballs in a deep pan with hot oil for 2 minutes or until golden brown. Drain excess oil on paper towels and set aside.
  • In a saucepan, add 2 tbsp used oil. Sauté onion, then add the remaining ingredients. Stir continuously until the mixture simmers and thickens. Adjust seasonings as needed.
  • Add cooked meatballs and simmer once.
  • Makes 4-5 servings

A dish that is a staple in many Filipino households is the Bistek Tagalog. Slow-cooked to perfection it only takes around 10 minutes to cook. Just add onions (if feeling yamanin) to get that authentic Bistek Tagalog you are looking for.

Correct me if I am wrong but, Bistek just isn’t the same without onions, am I right?

To my non-Filipino friends, you guessed it! Bistek is the Filipino way of saying beef steak but, as with most dishes that are “Filipinized” it tastes nothing like the beef steak you probably grew up with.

Bicol Express is probably one of my favorite Filipino dishes because it is spicy. The main ingredients of which are meat, peppers, coconut milk (gata), and seasonings. As an extender, you could add vegetables like sigadilyas (also known as winged beans), for example. I’ve seen some versions with carrots and bell peppers but I think they are more for color contrast.

When I had the opportunity to try this I was pleasantly surprised at how flavorful it was. With instant dishes like these, I tend to assume that I would still have to fix them to make them edible. Thankfully, that isn’t the case.

Ingredients

Doughnut

  • 7 cups Mix 'n Fry Yeast Raised Donut Mix (1 kg)
  • 4 tsps. Emperor's Best Instant Yeast (11 grams)
  • 1 1/2 cups water plus 1/2 tbsp. (350 grams)
  • 1/4 cup vegetable oil plus 2 tsps. (55 grams_

Sugar glaze

  • 4 1/4 cups powdered sugar plus 1/2 tbsp. (600 grams)
  • 2 tsps. gelatin powder (6 grams)
  • 1/2 cup hot water plus 1/2 tbsp. (120 grams)
  • 2 tbsps. corn syrup plus 1 tsp. (45 grams)

Instructions

Doughnut

  • Combine all ingredients and mix at low speed for 1 minute. Scrape sides.
  • Shift to high speed and mix until the dough is fully developed. Rest the dough for 30 minutes.
  • Roll out the dough (‘’sheet’’) to about 10mm thickness and rest for 30 minutes.
  • Cut out using a doughnut cutter and arrange on cheesecloth-lined trays. Proof for about an hour or until it doubles in size.
  • Preheat the fryer to 180°C. Fry for 40 seconds on each side. Drain excess oil on paper towels and cool.
  • Coat with sugar or apply sugar glaze.

Sugar glaze

  • Combine powdered sugar and gelatin and mix while gradually adding hot water.
  • Add the light corn syrup and mix until smooth and thin.

Purefoods Ready to Eat Viands Part 4: Pork Binagoongan Rice

I have a confession to make.  This was actually the first Purefoods Ready to Eat Viand I experimented with but it didn’t turn out well so I decided to redo it.  Since I only eat rice once a week now, I could only wait until my cheat day to make pork binagoongan rice properly. 🙂

The first time I made it I made the rookie mistake of cooking this dish in a pot over direct flame instead of the way I would normally cook rice.  It was a mistake because I was so worried about burning the rice at the bottom that I kept stirring it.  The end result was the pork slices crumbled.  It still tasted good but it wasn’t presentable.  Usually, we steam our rice in a steamer but since it was being used I decided to bring out the rice cooker.

For this recipe, we will use the Purefoods Ready to Eat Viand: Pork Binagoongan.  I loved making this dish because it really stretched out and fed our entire family with rice to spare!

Pork Binagoongan Rice

Ingredients

  • oil
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1/2 can mushrooms, sliced
  • 1 pack Purefoods Ready to Eat Viand: Pork Binagoongan chopped while frozen
  • 3 cups washed rice
  • 3 cups water
  • 2 tbsps butter

Instructions

  • In a wok, saute the garlic, onion, and mushrooms.
  • Add the pork binagoongan mix and simmer until it is melted.
  • Add the washed rice and mix properly. Be careful not to overmix or the meat will be shredded. You just want to make sure that all the rice is covered in the sauce.
  • Turn off the stove and transfer the content of the wok into the rice cooker and add the water. Cook.
  • Once the rice is cooked add the butter and fluff the rice.
  • Your pork binagoongan is ready to be served and eaten.

Notes

Pork binagoongan is usually served with eggplant.  In this recipe, I did not include it as I happen to be allergic to eggplant but feel free to add it to your own.  You can also add green onions at the end as a finishing touch.

It was delicious!  There was so much that each of us had about 1 to 1.5 cups each.  Since there was some leftover, my sister decided to jazz it up more by refrying it and adding light soy sauce and scrambled egg.  The only thing missing was the sliced mangoes. 😀
