In this time of Enhanced Community Quarantine (ECQ), some of us might have already felt the urge to think of ways we can lend a helping hand. When the opportunity to assist came knocking on the doors of some ordinary, everyday women like Marielle Solomon, Sarah Jane de la Rosa, Pia Alviola, Melissa Olit, and Angela Espinosa, they embraced the chance to help and made things happen!

They have been voluntarily and wholeheartedly taking on tasks of providing food, sourcing relief goods, creating PPEs, and mobilizing resources for Filipinos in the COVID-harm’s way. They didn’t think twice to go out of their comfort zones to share a part of themselves and be a light to others.

Marielle Solomon

Marielle Solomon is a marketing professional who currently spends most of her time around volunteers like herself in Siargao Community Kitchen to ease the plight of families on the island whose source of income has been affected by COVID-19.

At present, they have provided over 4,000 food packs, staying true to the belief that the community starts with sharing. Through her efforts, Marielle is just one of the women who bring light to the island of Siargao.

Sarah Jane dela Rosa

Sarah Jane dela RosaStudent Sarah Jane de la Rosa’s light has truly radiated throughout the Metro. She has proven that being a differently-abled person is not and will never be a hindrance if you put your heart in the service of a solid cause.

A volunteer at the Barangay Holy Spirit Person with Disabilities Association, Sarah who is afflicted with cerebral palsy, ably leads her team as their President in providing relief packages in the area. As of today, the association has provided much-needed help to more than 1,000 PWD’s and their families.

Angela Lapinosa

Through a drive called RICEaboveCOVID, Angela Lapinosa, one of the lead organizers of the initiative, has illuminated the city of Cebu with her generosity and service.

At the Cebu Institute of Technology, Angela is known as a student leader. But for the two hundred beneficiaries of the cause she represents, Angela is one to remember only with the kindest of words.

The young ones also acknowledge her as someone who has shed light on their lives and has given them hope for being the project manager of “Para Kay Baby”, a project under RICEaboveCOVID that has allocated 100 relief goods to the families of infants and children in her town.

Melissa Olit

In Puerto Princesa, Melissa Olit, the founder of Chef Aiza’s Community has seen to it that her community in Palawan is given the proper nutrition and sustenance they need.

From front liners to students, and even to hard-working construction workers stranded on the island, Melissa has made sure the food she prepares and delivers are sourced from local farmers to sustain their livelihood.

Over the course of bringing light to front liners and local farmers, her group has already served more than 5,000 food packs.

Project Love PPE and Masks has produced and donated over 1,500 masks and 600 PPEs in various hospitals. This initiative is the brainchild of Pia Alviola, a Fashion Designer based in Makati City, who has found a way to bring the light among our healthcare front-liners the best way she knows how, through her skills, and her desire to not only provide a source of income for her team of seamstresses and tailors but also to be an instrument of providing protection in these times.

These five extraordinary women have truly become light-bearers in their communities for serving as volunteers who through their service and heart, have greatly contributed to the common good. Like these women, SkinWhite has always believed that anyone can#BeTheLight especially in times of uncertainty. Every effort no matter how small can have a considerable amount of good especially to those who are in need. Let us continue inspiring and encouraging these women by supporting their causes, as we too can be the light in our own ways.

Participants will be given one workout every Wednesday for 60 days led by celebrity coaches Nadine Lustre and Alden Richards who will guide them with endurance, cardio, legs, abs, and core exercises. Participants will also be served with additional fitness content every day for the whole duration of the challenge, which includes healthy recipes, inspirational quotes, fitness tips, and many more!

Each time content is served, participants are encouraged to submit one photo or more of themselves per week. Photos must also be related to the challenge like performing the given exercise, Century Tuna recipes, or progress photos.

One (1) submitted photo will be randomly chosen every Wednesday to win the participation prize. Previous winners are eligible to win again the following week. To qualify for the grand prize, participants must submit a total of four (4) photos from different weeks.

However, only those who signed up for the challenge during the sign-up period from April 13 to April 23, 2020, will be eligible to win the Grand Prize at the end of the 60-day program.

Let your little Home Foodie master chefs enjoy a hands-on Facebook cooking & baking session. Resident Home Foodie chefs will do a live learning session of 5 scrumptious, kid-friendly recipes.

Before the live session:

    1. Read the recipes and the tools/equipment list in advance.
    2. Prepare the purchase list and buy ingredients ahead of time.
    3. An adult should help in the preparation.
    4. Prepare the needed ingredients and materials before the session.  Make use of the time as a pre-bonding session with the kids participating.
    5. Make sure the tools and equipment are working and clean.
    6. Arrange needed tools by recipe unless it is a common tool.
    7. Pre-measure the ingredients in advance.
    8. Some notes on the ingredients that need to be pre-measured:
      1. A bar of Magnolia Cream Cheese is considered as 1 cup so for a 1/2 cup requirement, just cut the product in half.
      2. Use measuring spoons, solid measuring cups for dry ingredients (marshmallows, breadcrumbs, Magnolia All-Purpose Flour, sugar), and a liquid measuring cup or glass for liquid ingredients (Pure Oil, Cookbest, Golden Fry, corn syrup, water).
      3. Use a spatula to level when measuring solid ingredients.  For liquid ingredients, place measuring cup or glass on a flat surface and read at eye level … you will see two lines, use the lower line as the basis for the amount.
      4. A coarse or fine grater for Magnolia Quickmelt Cheese is okay to use.
      5. The size of the Magnolia brown egg should be medium or large.
      6. The needed pasta should be cooked in advance.  Follow package instructions.
    9. Slicing/cutting of ingredients will be done live so that everyone understands how it should be done.
    10. Have pot holders/cooking mitts and aprons ready for protection.
    11. Have a first aid kit ready in case unforeseen cuts or burns happen.
    12. Read the Waiver and Release of Liability Clause below.  Home Foodie assumes the authorized guardian/parent has agreed with the waiver and release of liability if the participant joins the activity.

During the live session:

  1. An adult should be around to supervise.
  2. For cutting/slicing, either the adults will do this part or have the kids use a plastic knife.
  3. Kids must wear aprons and long hair should be tied.
  4. Kids must wash their hands well with soap and water before, during, and after food preparation.
  5. Kids whose height is at least waist-level above the stovetop/burner can be allowed to do the cooking, subject to adult consent and supervision.
  6. Separate tools used for raw and cooked items.
  7. When frying, gently put in the food item to be fried.  Do not throw in the pan with the hot oil to prevent burns and fires from happening.
  8. Cooked items should never come in contact with raw items. Keep these separate.
  9. Cooked food, if not cooled and stored immediately, should be consumed within four hours.
  10. Store leftover cooked items and no-bake dessert in covered containers in the chiller.  Cookies must be kept in tight containers.
  11. Cooked items must be consumed in three days.
  12. Participants with finger cut/injury should have their wounds covered in a bandage and use disposable gloves during the session to prevent potential food safety issues.
  13. We will try to answer questions as much as we can during the live session given the number of participants.  To save time, it is best to read the recipes and materials needed and review the guidelines in advance.

Recipe: Biko or Bibingkang Malagkit

Bibingkang malagkit or kumot as my dad used to call it is a rice cake snack that my dad used to love.  We would buy a small tray of 8 squares every week.  My dad called it kumot because of the layer if coco-caramel on top.

Is it also called biko?

Bibingkang malagkit is also called Biko.  The only difference that I can see is that Biko is brown and is often topped with latik instead of coco-caramel sauce.  To achieve that brown color, replace the white sugar with brown sugar.

Our favorite kakanin seller has not been around since the quarantine and when I ordered from someone on Facebook who makes bibingkang malagkit Facebook I was very disappointed at what I received … it was 10×10, as promised but the rice part was barely a centimeter high and the coco-caramel topping was about as thick.  It was so thin that the only way to enjoy it was to roll a slice into a log and THEN eating it.  It was a waste of money.  Therefore, I decided to try making it myself.

I looked at several recipes online and chose the one I thought I could work with and yet I still made changes because I wanted it to look just like the one dad liked. 🙂

It took quite some time to make and requires a lot of patience but if you keep at it, you will be quite happy with the end result.

Time to cook!

Below is my version of the bibingkang malagkit.  I was surprised that it turned out pretty well … exactly the same as the one dad and I used to buy.  Yey!  Today I had it for dessert with my breakfast.

FYI, I love using a wok for most of my cooking so for this recipe I still used two woks … a big one for the kakanin and a small one for the sauce topping.

Biko or Bibingkang Malagkit

Equipment

  • big wok
  • small wok

Ingredients

  • 1 tbsp. butter for coating the baking dish

Kakanin

  • 4 cups malagkit rice also known as glutinous rice
  • 1,000 ml. gata coconut milk
  • 1.5 cups water
  • 1.5 cups sugar white or brown
  • 1/4 tsp fine sea salt

Topping

  • 200 ml. gata coconut milk
  • 1 cup dark brown sugar

Instructions

Prepping the baking dish

  • Take some butter and lightly coat the inside of the baking dish at the bottom and the sides and set aside.

Preparing the kakanin

  • Place the rice in a bowl then wash and drain it. Place enough water to cover and soak for a few hours ... one hour at the very least, overnight at most. Note, that the longer you soak it, the better the rice will cook later.
  • When you are ready to cook, drain the rice and set aside.
  • Place the coconut milk and water in a saucepot, set the heat to medium and simmer.
  • Add the drained rice and stir often to be sure the rice does not burn along the sides of the pot. Continue to cook over medium heat and mixing until the rice has soaked up most of the liquid. Using a large wok makes it easier to mix.
  • Reduce the heat and add the white sugar and salt to the rice mixture and mix. Make sure the sugar and salt are completely mixed into the rice. You will notice that the rice where the sugar gets mixed in becomes shinier so keep mixing gently. This will take around 10 to 15 minutes, more or less.
  • Taste the rice every now and then to make sure it is cooked all the way through. You know you are done when the rice mixture is sticky and clumps but separates from the pot easily.

Preparing the coco-caramel sauce topping

  • Place the remaining 200 ml. coconut milk and the dark brown sugar in a saucepan.
  • Turn on the stove and mix until completely mixed and the sugar is dissolved.
  • Turn off the stove and allow to cool for 2 to 5 minutes.

Putting the dish together

  • Transfer the rice mixture into the buttered baking dish and spread it until it is flat and evenly spread.
  • Pour the sauce over the rice mixture and make sure it covers the rice mixture completely.

Time to bake

  • Heat your oven to 350F. Some say to preheat before you start cooking but, personally, I usually wait until I am actually going to bake because I cannot predict how long the preparation would take and it would be a waste of gas (or electricity).
  • Once it has reached 350F place the prepared tray in the oven and bake for 1 hour. The sauce topping will bubble and thicken.
  • Set aside and allow to cool before serving.

Kim Ji Young is a story about an ordinary housewife who toils over her child and husband day in and day out. When she falls into postpartum depression, her supportive husband encourages her to seek help.

The movie’s director didn’t focus on a pessimistic approach to telling the story. “I wanted to send a hopeful message to all Kim Ji Youngs in 2019,” Kim Do Yeong said in an interview, “that they are living in a better world than Ji Young’s mother, and their children will be as well.”

The movie stars Jung Yu Mi and Gong Yoo who have worked together before in Silenced and Train to Busan.

Recipe: Steamed Fish in Light Soy

Coming up with healthy dishes that my family would enjoy could be challenging, especially when frying food is just way simpler to do.  Thankfully this dish was a success!

Steamed Fish in Light Soy

Equipment

Ingredients

Fish

  • 2 pieces fish fillet Dory is a good option
  • salt
  • pepper
  • 2 tbsp ginger, julienned
  • 8 stalks spring onion, julienned

Sauce

  • 2 tbsp light soy sauce
  • 2 tbsp brown sugar
  • 1 tsp sesame oil
  • 2 pieces kalamansi juice and remove the seeds

Instructions

  • Dry the fish fillet with a kitchen towel then season with salt and pepper. Set aside.
  • Peel and slice the ginger in julienne slices Cut and slice the spring onions into julienne slices as well.
  • Prep the streamer by making sure there is water underneath and the rack or steamer cover does not touch the water. Turn on the stove and bring the water in the steamer to a boil.
  • Take your steaming pan and put half the ginger and half the spring onion at the bottom. Put the seasoned fish on top then place the remaining ginger and spring onion on top of that.
  • Place the steaming pan in the steamer and steam the fish for 10 minutes. You will know that the fish is done cooking when it turns from translucent to white.
  • Once cooked, take the fish out carefully without breaking it and place it on a serving plate.
  • Take out a pan and put together the light soy, the brown sugar, sesame oil, and juice of the kalamansi. Place the stove on low heat to melt and mix the sauce. Once the sauce is ready pour it on the fish.
  • Your dish is ready to serve.
